Spicy Fried Chicken Drumstick Recipe – extra crispy on the outside while soft perfectly cooked meat inside. Tons of flavor & very little effort!
I am back after spending some fun time with Ronak’s extended family and it was loads of fun! It was actually the first time I got to spend quality time with his cousins who are just 8 and 11. We spent our days playing fruit ninja, life and cards! I felt I was a kid again and then I got to see the newly born baby . She is the cutest and I wish I can cuddle her again!
Family trips also means getting to eat lots of delicious home cooked food. Ronak has a huge extended family and that means this trip included lots of visits to each one of them and I got to taste lots of delicious food. Two recipes were my favorite and I made sure to write them down so I can share them here soon with you all. A very simple vegetable sandwich and a paneer wrap. I took Brookies which everyone loved and also made apple pie which was Ronak’s breakfast the next day! 😛
Before leaving for our trip, I made us these spicy crunchy fried chicken drumsticks packed with tons of flavor. If you have eaten KFC’s fried chicken the way they sell in India, you will probably find this recipe very similar. The outside is super crispy while the inside is perfectly cooked and soft.
It’s a very simple process to make these. A night before or few hours before marinate the chicken drumsticks in a yogurt, egg and spice mix and let it sit in fridge. If you like crispy skin you can leave skin on drumsticks. I like to remove the skin before marinating the drumsticks. Take out the marinated drumsticks and place them on a plate. Then one at a time, dip the drumstick in flour then again the leftover egg marinade and then in bread crumbs. Make sure you press the bread crumbs tightly so the drumstick is covered with breadcrumbs. Place it on a cooling rack while you finish the rest. Heat up the oil for frying. Drop a very small piece of bread crumb in the hot oil and if it comes up immediately, that means oil is ready for frying. Cook these drumsticks 1 or 2 only at a time on medium gas so they cook from inside without getting burnt. It will take around 5-6 minutes each side.
I like to use a cooking thermometer to check if the inside is cooked or not. The inside should not be pink at all and the deepest part should register about 165F. That means they are ready to be eaten!
Serve them hot with a squeeze of lemon and ketchup and lots of chilled beer!

- 5 chicken drumsticks
- ¼ cup yogurt
- 1 egg
- Salt to taste
- ⅛ tsp black pepper
- ½ tsp red chili powder
- 1 tsp green chili paste (optional but recommended!)
- 1 cup all purpose flour
- Salt to taste
- 1 tsp basil powder
- ¼ tsp black pepper powder
- 2 tsp garlic powder
- 1 tsp ginger powder
- 1 tsp red chili flakes
- 1 cup bread crumbs
- Oil for frying
- Clean chicken drumsticks and remove skin if you want to or keep it on. I like to remove the skin before marinating.
- In a bowl place the cleaned chicken drumsticks and using a knife cut make few slit marks on the chicken which helps the marinade to go inside the chicken making it lot more flavorful! To it add yogurt, egg, salt, black pepper, red chili powder and green chili paste . Using your hands coat this marinade all over the chicken. Cover tightly and place in fridge overnight or for atleast 6 hours.
- When ready to fry, take 2 shallow plates. Place all purpose flour in one and add 2 tsp garlic powder, 1 tsp red chili flakes, 1 tsp basil powder, salt to taste, ¼ tsp black pepper powder, 1 tsp ginger powder and mix.
