Spicy Schezwan Chow mein Noodles – simple & cheap ramen noodles, tons of fresh veggies and spicy schezwan sauce. Start to finish just 20 mins to make these seriously delicious chowmein noodles which make dinner time simple!
Almost weekend friends! How has your week been so far?! If you ask me, I would say mine has been not so productive. Yes everytime I come back from a trip, I find getting back to daily routine real hard. So dinner these days has been super simple with meals that take almost not much prep work and still taste delicious. I know so many of you email me from time to time asking for simple dinner recipes that are cheap, taste delicious and healthy! Ronak loves eating ramen noodles while I love maggi (Maggi is Indian version of ramen noodles) which I grew up eating! Growing up I remember when I wanted something super easy, I would make myself a packet of maggi and add tons of vegetables such as peas, tomatoes, broccoli in it to make it healthy and guilt free!
Where we live it’s a rare treat when I can get my hands on maggi so last weekend I bought some ramen noodle packets to make something easy for dinner! I like to toss off the seasoning packet from ramen noodles and instead add my own spices. Making these spicy schezwan chow mein noodles took me start to finish 20 minutes. I kept my noodles to boil and while they boiled I chopped vegetables. I like to keep it simple with cabbage, carrots and bell peppers but you can use just about any vegetable you like. You can also add in tofu/chicken/beef for extra protein.
This was our quick dinner last night when all we wanted was something light, easy & quick. I received a bottle of homemade schezwan sauce from my aunt which is Amazing but if you don’t have homemade version, you can easily buy one from store!If you are not much into schezwan sauce flavor, then I would suggest instead adding sriracha or red thai curry paste or just keeping them simple with basic seasoning or you can even use the packet seasoning instead! All these flavorings taste great!
First put water to boil for boiling noodles and while water comes to a boil, quickly chop your veggies. Boil ramen noodles just enough meaning don’t overcook or they will get soggy. Meanwhile grab a baking tray. Once noodles are cooked which takes about 3-5 minutes, rinse them in strainer under cold running water for few minutes so they stop cooking immediately. Transfer them to a baking tray and add some oil, schezwan sauce, salt and pepper and toss them using your hands so noodles are evenly coated with the sauce.
Place a non stick pan over high heat and add oil. To it add garlic paste and all the chopped vegetables. Just stir it for few minutes just so the vegetables are cooked enough. You want to retain the crunch. It will take somewhere around 5-7 minutes for the vegetables to be cooked. Then add sauce coated noodles, salt, pepper, some vinegar and more schezwan sauce if noodled. Toss everything quickly and enjoy!
A simple filling dinner ready with very less effort. I like to make extra so I have leftovers for lunch!

- 3 packets of ramen noodles, any flavor as all we need is noodles not the seasoning!
- Salt to taste
- Black Pepper to taste
- 1 tbsp sesame oil or olive oil or any good cooking oil
- 2 tbsp schezwan sauce (homemade or store bought)
- 5-6 cups thinly sliced cabbage
- ½ red bell pepper, thinly sliced
- ½ yellow bell pepper, thinly sliced
- **If you don't have colored bell peppers, then in place of red & yellow just use 1 green bell pepper!
- 2 carrots, shredded (I have been using THIS (salad shooter) for shredding carrots & other vegetables for everything from gajar halwa, for quick stir fries and it takes just 2-3 minutes!)
- 1 tbsp oil
- 1 tbsp garlic paste
- 1-2 tbsp vinegar or as per taste
- Salt & black pepper as per taste
- More schezwan sauce if you want
